Description

The history of Mayfield dates back to 1815 when explorer William Charles Wentworth was granted a Mayfield Crown Grant from the governor of NSW. Today the Settlers Cottage is a heritage-listed homestead and popular accommodation. Vines were first planted in ’99 and Mayfield vineyard was born. Since ownership changed hands in ’21, Mayfield has been given a breath of cool, crisp Orange air from root to bottle under the guidance of the Eastham family. Single-vineyard wines, minimal intervention and a focus on elegance, refinement and vivacity are at its core.

 

Cool climate range includes Chardonnay, Pinot Noir, Sauvignon Blanc, Riesling, Rosé, Sparkling and Cabernet. Planted in 1998, Mayfield Vineyard’s natural features include an elevation of 950m with more than 900mm per annum rainfall. The cool climate compliments the rich loam and basalt soils to produce one of the top wine regions in Australia.

 

Spring brought higher-than-average temperatures, resulting in textbook vine growth and fruit set. Maximum temperatures remained below 30 degrees, with long sunshine hours—conditions reflective of Orange’s best vintages. We experienced no disease, flawless phenological ripeness, lower sugar levels, and exceptional acid retention.

 

Garnet red in colour, this wine is light, fresh, and aromatic, with floral notes alongside cherry and summer berry aromas, and a hint of leafy varietal complexity. The palate is light to medium-bodied, with bright freshness, soft tannins, and a gentle, lingering finish. Approachable and versatile, it could even be enjoyed lightly chilled

Mayfield Vineyard Farm Cabernet ‘The Donkey’ 2024

Each variety was harvested and fermented separately in small open fermenters, with gentle hand plunging twice daily to guide extraction. After a 10-day fermentation, the wine remained on skins for a further four days of post-ferment maceration, enhancing structure and depth. Following pressing, it was transferred to stainless steel for malolactic fermentation before being racked to barrel. The wine was then matured for 12 months in a selection of new (12%) and seasoned oak, contributing subtle layers of spice and complexity.
