AROMA: Toast of the barrel in tune with a floral and delicate character.
PALATE: In the mouth it presents a lot of aromatic intensity, where the peach aromas and floral notes stand out again. Firm and well-integrated acidity. Very balanced and persistent finish. With a good volume in the mouth, young, with good acidity. It is a wine that you want to drink without being heavy, thanks to its balance. Long finish, very refreshing

The grapes selected for this wine come from different Sub-Regions of Dão. The the age of the vines ranges between 60 and more 100 years. Many of these grapes come from monovarietal vineyards, but also from vineyards with a wide mixture of typical grape varieties from the region such as Encruzado, Malvasia fina, Uva cão, Rabo de ovelha, Branda, Barcelo, Douradinha, among others.
As white grapes are more sensitive to diseases and because most of the aromas and their precursors are contained in the skins, it was extremely important to ensure a perfect selection of the grapes from the vineyard, and thus guaranteeing the final quality of the wine. Upon arrival at the winery, the grapes were sorted again and sent by gravity to the pneumatic press. The purpose of this process was to gently extract the juice, and to later send it to a thermoregulable vat, allowing the juice temperature to cool down and naturally clarify the must. 48 hours later, the must was ready to ferment in French oak barrels.

Centenarian vines. Field blend of 15 varieties – 20% white varieties. 100% destemmed. Vinified and aged in 1962-built concrete tanks for 22 months.
Dark crimson and still transparent. A herbal freshness (it was a cool year in the Dão). Cool, herbal dark-red fruit. Utterly pure, with a concentration that is inherent, not forced. Bone dry, finest of dry tannins. Almost chalky. Long, fragrant, dry, pure and elegant. ‘Perfectly defined’, as the named suggests.
